This PR replaces the "Published" field with Latest Version and lists the version if published and not published if it is not.
Also, updated all extensions that were listed as "Proposal" that had been published to "Pilot", because by the definitions of maturity I think these should all be pilots (they have schemas, examples, all details...not sure of catalog implementations on some). Some of them should also be "Candidate"
