Description

Split release workflow by product.

Continuation of the work done in #733.
Reuse the image build workflows for dev, but refactor them to be usable for release.
Restrict the old release.yaml workflow to workflow_dispatch (it can be removed after the 24.11 release).

[!NOTE] How can we test this? Maybe we can make a release tag with build-info (and then delete it after)?
