Rework GitHub Pages deploy #335

I can confirm this works, I made a similar workflow deploy on my docusaurus project :) https://github.com/dylmye/mui-google-places-autocomplete/actions/workflows/deploy-documentation.yml

I stumbled across this while trying to work out why formik-mui-lab wasn't working (and saw the issue about the docs for switching to the new package not being deployed)
