This is likely needed across other stactools packages, but a couple things would be useful here:

A description of any s2: properties that this package adds.
A JSON schema published by this repo so that new fields can be part of a proper extension

This has been resolved by the creation of a Sentinel-2 community extension: https://github.com/stac-extensions/sentinel-2
