I want to understand if it's legal to use this tool to generate my ebooks that are not contributed to SE. I don't intend to use the imprint page and remove SE attribution pages.

I looked at the LICENSE file but I suppose that is more relevant for the tool itself and not the generated ebooks.

Yes, like any open source tool you can use it to create whatever content you wish.

Might be worth pointing out that create-draft has a white label option that generates a non-SE-branded book skeleton.
