Change in self-hosted approach? #117

Hello StandardNotes team - I saw the comment on https://github.com/standardnotes/self-hosted/commit/a2c2255a9980ea34e03efe622ce4b08c40682e1b which reads: "feat: locking last supported version in favour of one-container self hosting setup"

Is this change something you'd be able to provide some background on, and is there any danger in continuing to use the "latest" tags in the near term? I personally would love a single-container setup, so am excited to see that may be possibility!

It seems like they change to supervisor style service management. Commit and docker image
