I don't think we should assume how devs like to install poetry, therefore removing from bootstrap and assume it's there
adding nox support to run tests in supported Python versions locally (will come handy with an upcoming generics support idea I have...)
update to latest and greatest core dependencies (have to think about how relaxed those should be once we get more stable as we intend this to be a building kit for an API router to embedded into a FastAPI instance provided/customized by devs for their purposes)
