There are 2 ways to change sounds for items (both outlined in the wiki):
If you have no programming knowledge, you can easily make a resource pack. To help with the item/block names, you can turn on item ID display by pressing F3+H in-game. Then you can scroll through the sound list with the /playsound
command to see which sound/pitch combo would work best.
Or, alternatively, you may ask the developers of any given mod to add compatibility with ExtraSounds themselves, so they assign sounds they deem most fit.
That being said - I'm working on a web tool that would allow you to pick sounds and items with a graphical interface, which is much more convenient than manually editing the JSON. No ETA on when that's being released, however.

I have mod installed called Conjuring and it added some new items and gears. And I want to change the sound when I interact with them, could you make it simpler to change it for a beginner like me who doesn't know C++? Or make a tutorial video about it?
