Updated R packages in Dockerfile

This pull request addressed compiling issues identified in PR #5. Dockerfile was updated to fixed issues for installing a few R packages.

Building the image took about an hour. An updated Docker image is available here for quick testing.

hi - many thanks for all of this! in the meantime I have been working on creating a new repo to contain the Dockerfile and related files to create an image that can build both the R and Python books. Can you have a look at this and let me know if you see anything that should be carried forward from your edits?

A couple of notes:

I had to remove a couple of imports (BayesMed, DiagrammeRsvg) because of library conflicts that prevented building.
I have found that the latest lme4 conflicts with the latest Matrix library (cf https://github.com/lme4/lme4/issues/699) which leads to runtime crashes of some of the code. I solved this by using older versions of lme4 and Matrix (see install_lme4.R).

Thanks, I'll close this PR since it is no longer necessary due to the creation of a new repository to manage the Dockerfile and other related codes.
