Adds a docker compose example to the readme.

we can use a docker-compose.yml as well, then all we need to do is docker compose build/up, i would like to keep the readme as clean and easy as possible

Added one - hopefully that helps! Should I include instructions / change the docker-compose so that it builds from this repository instead of pulling the image from dockerhub?
