Improve charts documentation #267

We need to improve the docs for the charts' components so that we can easily extract them to Stellar Design System if desired, and also it would make it easier to others to maintain and understand what does what.

@quietbits do you think it makes sense to include any examples for the charts? Or maybe their use across the project would already be valid as examples?

@italomlp I think this repo is good enough for examples now. We'll add chart examples when they are added to the Design System, but that might not happen in the near future. Don't worry about it now, thanks for checking! :slightly_smiling_face:
