Update example(s?) to support single-asset balances. #187

Related: stellar/go#4723. This is split off into a separate issue for better tracking.

Things to be done:

Investigation:
- [ ] Which examples make assumptions about balance structure?
- [ ] What are the implications of the balance changes on each dApp?
Implementation:
- [ ] TODO: Enumerate which dApps need updates.
[ ] Testing: TODO: Informed by everything above.
[ ] Documentation? Any updated dApp will need references to it in the Examples updated.
