Bump sdk #271

What

Update the examples for testnet. The git refs should be removed and the sdk version should be updated once the sdk has been release. Only then should this PR be merged.

@leighmcculloch just making sure you know this branch/PR exists so work isn't duplicated.

I've changed the target branch of this PR to be the release/next branch. I wasn't sure what version the next release would be named, so I've used the term next instead.

The release/next branch is tracked for merging in https://github.com/stellar/soroban-examples/pull/277.
