Allow external override of variables without edit #10

I'm building this script into some automation, and forcing users to edit this script when these variables are different is super inconvenient. It would be better to allow users to override them with environment variables.

I'm not willing to maintain my docker image, so feel free to either merge this or not. I don't need these changes.
