Update CTV and TXHASH use-cases in summary table #14

Per these tweets, updating the table to properly reflect what CTV supports and specify why TXHASH supports LN-Symmetry:

I'm not convinced that CTV can do payment pools. Please give me something to read about that. I made the other changes, thanks!

Just FYI I would have been happy to amend and leave this open while we hashed it out! Can do that in the future if you want, happy to make updates as we go back and forth, squash, and then merge.
