refactor, fix cleanup, add skype support

changes include:

bump up alpine from 3.6 to 3.7, current latest
bump up discord commit to 0a84f9d, current latest
add skype commit variable
separate installed packages in build and runtime groups
download and clone all source files to the same location for consistency
checkout individual plugins with their corresponding commit value instead of master
add instructions for cloning and installing skype4pidgin
fix cleanup folder locations
pull image size reduction from 485MB to 224MB (-53.81%)

Changes look excellent from a read through - thanks for doing this :) Just gonna build and test, and if everything looks good for me, I'll push to repo + docker. How would you feel if I added you as a repo maintainer, @realies? All of your PR's have been good quality, and you're obviously keen to improve the image :)
