Enhance with stratis-writemetadata command to overwrite Stratis pool-level metadata
Improve with detection as suggested in https://github.com/stratis-storage/project/issues/678 but specifically verifying correct size of thin meta spare.

Our first improvement has landed, in that there is now a command to simply obtain Stratis pool level metadata over the D-Bus, which will be available in stratisd 3.7.
