should we use the latest tag? currently, alpine latest -> 3.20 and 3.20.1

should we use the latest tag? currently, alpine latest -> 3.20 and 3.20.1

We're already using 3.20, though doing the apk upgrade is needed to fetch the latest patched version of packages
