Header 1 is the title of the note. The standard structure of a note or any document is that it has one main heading. Everything else is either H2 or something else.
The other issue regarding Markdown import is a genuine bug.
I think it is not true that the standard structure of any doc is to have only one H1. There is one title, but it can have as many headings as it wants. If you look at Google Docs or MS Word, you can have as many h1 in the docs as you like. In Markdown, it is also not prescribed that you can only have one h1. Markdown doesn't have the "title" equivalent, but it doesn't mean h1 is the title.
I would request you to consider this further as it is not intuitive to have no h1 in the doc and break existing Markdown notes that can be imported to Notesnook.
Why the editor doesn't have Header 1? This also becomes an issue when importing a Markdown file that contains h1.
