Update Fabric8 Kubernetes Client to 5.8.0 and other minor changes #4

This PR updates the Fabric8 Kubernetes Client library to 5.8.0. The client now requires some more dependencies to be included even when only Secrets and ConfigMaps are used.

It also does some other minor changes:

Adds some overrides annotations
Removes Ulf from the authors - he was there do to bad copy paste from the Kafka Quotas Plugin project
