Restructuring notebooks for session2 #4

I have divided the notebook and created a readme to be clearer. Also I've moved the environment.yml file to the root folder so that this works on mybinder.org.

@TCLamnidis as far as I saw this now works on binder correctly with the dependencies in the root folder. I've also divided up the notebook to be a bit clearer. I will add a third one with some plink commands and analysis.
