Since we'll collect both when somebody buys and consumes coffee, we'll be able to fuzz a guess as to when it's time to buy more. We can make this as granular as we want, including

sending a notification asking if you made a coffee you usually make at that day/time
suggesting days you can go without coffee if you want to have just enough to last you through a day
suggesting how to best calibrate your coffee consumption to match the fresh roasted date at some place

Just some ideas of how to process and deal with data we'ok be collecting

I love this idea --

I picture an alarm sounding PING PING PING your coffee will be stale if you dont drink 2 cups in the next 36 hours.
