Use v9 in imports and make stytch.Client an interface #131

  1. Imports weren't updated in last PR
  2. Changes stytch.Client to be an interface so it can be overridden with something like gmock

Since this is still part of the v9 release, we're okay making this breaking change. This will bump us from 8.4.1
