Ubuntu was running into issues when not configured through the GUI (Docker Desktop). Additionally, there were some minor issues such as the Ubuntu version not being fetched properly.

Changed docker-compose to docker compose
There was some extra friction installing a standalone docker-compose
Added Linux specific installation instructions
Fixed Ubuntu version checking
Added sudo command prefix in case Linux users aren't running in rootless mode

Ran with a fresh install of Ubuntu
I had to manually override some URLs and scripts to get it to work. Once this gets merged to main, I'll try it again from the beginning as it's laid out in our docs
