Replace data paths with configuration values, likely ENV values #6

It would be nice to configure these scripts so that some of the data paths don’t need to be hard coded in the scripts.

The ENV values for data paths should be consistent with dev-ops concerns. That is, the values could be managed by puppet and map to NFS mount points for various systems.
