Update cocina model instance with new version in update job #668

Why was this change made?

This commit fixes a bug unearthed by testing the SDR CLI in QA where UpdateJob determines a new version needs to be opened, does so, but then passes the outdated cocina model (with the old version) to DSA

How was this change tested?

[x] integration tests (QA/stage)
