Email configuration #4

With this containerized, it no longer relies on sendmail to handle the email configuration. I don't see any config of the Laminas mail settings either. How do you accomplish this?

Hi @bwick29 , Were you able to do it? I am looking at it and will fix it but if you have done it feel free to let me know or contribute to the project.

We were able to get it working with an unencrypted connection to a local mail relay. I can maybe tinker with encryption later today/this week to see if we can get that finished. If so, I'll submit a PR.
