Forecasting Sims Config Changes #7

See #6 . The only needed changes by a user are to update the run configs to use the updated definition of each directory variable:

cosmodir : The directory location of the COSMOS catalogs downloaded by GalSim

matador : The directory location of SuperBIT-specific files used for the sims (probably superbit-metacal/GalSim/data/)
