This PR supersedes PR #72

I am leaving 2 conversations open as they were not addressed, though each only require removing 1 line. Once you add those in feel free to squash & merge!

Alright! I think the PR conversation didn't reflect the removed no-seed dither line in mock_superBIT_data.py, and I forgot to push the last commit removing the reference to truth_bg_gals. Both done, conversations resolved, merging now!
