Update to Tauri 2

This PR upgrades Surrealist to Tauri 2, which while still in beta, appears to work well for all our use cases and offers many improvements

Included in this PR:

• Full upgrade to Tauri 2
• Improved logging and introduction of a logs directory
• Support for opening .surql/.surrealql files
• Minor change to the desktop app icon
• Initial work on surrealist:// URI handler
