Update exchange whitelist

• Updated the whitelist for the exchange subgraph

• Also add a BLACKLIST_EXCHANGE_VOLUME list, this is just to not include some tokens in the total volume for the whole exchange. (e.g. delta) Probably will be better to fix this later and use the untrackedVolumeUSD prop for tracking volume on token's like these.
