Update current version of backstage demo system to a more recent version - at least 1.30.x

changing sx-backstage build from latest to additional actual version, and change base values for all backstage-instances sx-backstage:latest -> sx-backstage:v1.27.7

actual work:

switch to default Backstage Dockerfile (reduced containersize)
update to v1.32.5
update yarn v4
demo build pipeline to test different versions
