chore: Deps cleanup #24

I've updated and cleaned up some of our deps, deduping and removing unused deps.

I also added a pnpm override for Bits as vaul-svelte is locking onto Bits version 0.16.0, which causes the terminal to go nuts in printing warnings (which have already been resolve in 0.21.5). vaul-svelte will have to be updated separately.
