fix: update Vite peer dependency version #816

Sets 5.0.3 as the minimum because earlier versions are broken with SvelteKit

wouldn't it make more sense to add it to kit? technically this is a breaking change.

Yeah. I think technically v-p-s does work with Vite 5.0.0, but not SvelteKit so it should be updated there instead.

yeah, agreed. we can do that now that we're going to be cutting a kit 2.0
