Enabling observatory extension

Whilst I am not docker expect, I would like to extend the current dockerfile with the observatory extension. In my research I came across this documentation - https://github.com/xzfvictor/mapping.community-carto_install_doc I would appreciate any pointers as to how I could proceed?

I would follow the deploy instructions at https://github.com/CartoDB/observatory-extension and add them after https://github.com/sverhoeven/docker-cartodb/blob/master/Dockerfile#L202-L209

If you want to have whole big data instructure I would would use this Docker image as Carto instance and follow the quickstart at https://github.com/CartoDB/bigmetadata
