chore(build): remove wireit #183

Description

replaces wireit scripts with old boring npm run scripts
removes wireit from the development dependencies
removes wireit from the ci workflow

Motivation and Context

For state-machine-cat wireit the benefit:hassle ratio proved to be < 1. It's also different from other projects I maintain, which makes it harder to maintain.
