chore: downgrade chores version, disable default password and more #58

This

downgrades the version in the compose files from 3.7 to 3.5: this is still sufficient but makes it compatible to more clients
removes the volume from the sw360 container: I do not think that it was necessary or that it is used
removes the added default password for couchdb: for devel and testing it is not necessary
- it might be worth to discuss about that change
- this conflicts with https://github.com/sw360/sw360chores/pull/57
