A new file, projects.md is now available at root level. This file contains a list of projects, examples, and other kind of code developed by the community

Motivation:

A short conversation with @sebsto in this PR 👉 #297 about how to include a big example in the repo 😀

Modifications:

A file named projects.md that contains a list of projects using this library.

Result:

...a new file and the the opportunity to the developer community to share their code 😀
