Feature 82: eIAM Cleanup Tasks #142

Resolves #82. Depends on #107.

Removes local GoTrue Docker configurations.
Drops the auth database table.
Updates the README to be up-to-date in regards to OAuth and Prisma.

Tasks that will need to be done after deploying these changes:

Remove unused environment variables.
Remove any now-obsolete, external GoTrue services.
