Currently Nextcloud does not allow to change name and email for the default (admin) user.
This happens because we are using app independent identity storage (LDAP) to be able to store default account password in one place even before any app is installed. This also allows to change this password in one place (reactivation).
Eventually we will create user management app which will allow to change default user properties and also create centrally more users.
