Add documentation for NIR support #199

NIR support is now merged into v.1.2.10 but the corresponding documentation and tests are a bit sparse.

TODO:

[x] Add api documentation
[ ] Add tutorial
[x] Add how to
[x] Add doc strings where needed.
[x] Add unit tests to get coverage back above 90%
