fix: update docs to include all Git config fields #40

Adds documentation for all fields that we support for Git config.

This brings the docs in-line with what the code currently looks like (in the latest release); there are no corresponding functionality changes.

can we add a new "Changelog" section or page on the ske backstage documentation that includes the new features and breaking changes? we can then just add to it every time

@kirederik - definitely in favour of this, but not doing with this PR as nothing's changed any more!
