What this PR does / why we need it:
This restructuring is needed for building the navigation of the new docs website under syself.com/docs/caph.
Also, formatted the markdown files with prettier and improved the headings levels.
Some links were kept relative to the repo, so they will work on github and locally, but others outside of the /docs folder were replaced by their github full url. Images will be hosted on syself.com to prioritize serving them closer to where the new docs will be hosted (and not retrieving them from github)
