A few points:
In general I don't think this is worth our time to do. And the documentation does specify that it is false coloring.

I agree with Brian's points. Unless this is something Jeff & Karl think is really important, I don't see myself prioritizing this feature.

Coloring the channels red and green can be confusing to new users. We should have a color palette so you can customize the colors. The most important thing this does is tells people that Iris is agnostic about your particular LEDs.
