Adopt versioning for templates #1585

Describe the bug As bugs get found in the templates, it would be nice to have some sort of versioning of the templates, especially the Catalyst template, as you could have made some changes manually that has been added to the defaults.

An alternative to this, could be to include a changelog file in every template.

Hey thanks so much for this suggestion! It took me a few days to put together, but each Tailwind UI template now has a CHANGELOG.md file include in it which provides a history of all the changes we've made to the template.
