Make sure distributions used for ensemble rates agree with Overleaf #140

As pointed out by @lubo93, currently the distributions used for clinical parameters (latent period etc.) are normal in some of our examples. This doesn't agree with what's written in the Overleaf doc, so we should either update Overleaf or change the code.
