log configuration environment options #211

You can override default log format and log level via container environment

I'll highlight that this change will actually appear in the new images together with the next releases, because we don't change existing images (except so called rolling tags like :1 or :2.8). We can rebuild images with -r1 postfix and promote rolling tags, but it does not look worthful, to be honest.
