Update all processor .env.template files to use nats instead of jetstream #374

The current value for the STARTUP_TYPE environment variable in a number of .env.template files is jetstream. The default NATS implementation mode across the platform is nats.

Accepptance Criteria

Update STARTUP_TYPE=jetstream to STARTUP_TYPE=nats in all processor .env.template files:
