Downscaling crop data #27

Replacing the Kansas cropland raster with a New Jersey, lower resolution cropland raster, replacing the Kansas temperature Jan 2020 raster brick with a New Jersey temperature Jun 2024 raster brick, updating the examples and the readmes to reflect the new data. Ran a successful check with no errors, but prior to approving the pull request someone should probably confirm that the examples run as expected on a different computer by installing stagg from this branch.
