Fix validation of poseset model

There were some issues with validation of the new poseset model:

shift = None was getting coerced to an empty array
coercion was actually happening inplace, but not even always. Now it's all happening on a shallow copy unless inplace is passed.
tests now check that coercion succeeded, not just didn't error
